That does look fascinating: most innovative bottled coffee product ever, I suppose.
Here's my guess on why it's never been done before:
Carbon dioxide is very bitter.
Coffee is bitter.
Mix the two? Bam!
But, Starbucks has gotten people used to syrup coffee. Therefore, the time has come when they can load the thing down with enough sugar to make it palatable.
